Say you want to make a fancy infinity symbol. A cheap way to do it is to turn an 8 on its side and then adjust the width of its strokes.
So, select the Width Tool in the toolbox bar.
On an 8 you have turned on its side, double-click an anchor and a text box will appear.
Change the total width value to 10.
By creating different values at different anchor points, you will get a smooth transition as the lines of the 8 curve and get thicker/thinner, like such.
